Recipe: Turkey taquitos

Bored of the usual fajita recipe? Then give my turkey taquitos a bash - it'll revolutionise your Mexican dinners! I recently discovered Fresh Mex seasoning sachets in my local ASDA and, although I've had this recipe for a while, knew they'd take it up a level with their freshly ground spice blends.  I first tasted their delicious burritos in their award-winning restaurant on Lothian Road in Edinburgh and was delighted to be able to get their products in the supermarket.  

This recipe takes very little time to prepare and the turkey mix will easily keep for a few days in the fridge - ideal for a quick lunch.  I will warn you - these wraps are VERY filling! You might see the butter at the end of the recipe as avoidable calories, but, believe me, basting the wraps seriously enhances the enjoyment


Ingredients (serves 4):

500g turkey mince (get as high a fat content as you can find)
1x Fresh Mex sweet & smoky spice sachet
2x peppers, finely diced
1x red onion, finely chopped
2x garlic cloves, grated
1tsp tomato puree
1x lime, zest and juice
1 tbsp, sherry wine vinegar
Drizzle of Sriracha sauce if you like it spicy
8 tortilla wraps
Bunch of spring onions, finely chopped
120g cheddar, grated
25g butter, melted
1x jar, Fresh Mex tomato salsa
Sourcream
Guacamole 
Jalapenos to serve

Method:

1) Put a splash of oil into a large frying pan and cook the turkey mince until all the water has evaporated. Season with salt and pepper then set aside. This should take 7-8 mins.

2) In the same pan, sweat the peppers and onion for 6-7 mins until soft. Now add the garlic and fry for a further minute.  Add the turkey to the pan and mix through.  

3) Add the tomato puree and cook for a minute before adding the sherry vinegar and lime. Continue cooking until the mix is heated through.

4) Spoon a portion of the mix into a tortilla.  Add a sprinkling of cheese and wrap up.  Repeat for
the desired amount of tortillas. 

5) Put a clean frying pan on a medium heat and add a splash of oil.  Fry the wraps fold side down for two minutes, then turn.  Be careful as they can burn very easily! Add the butter and baste for a further minute.

6) Serve with Fresh Mex tomato salsa, guacamole, soured cream, spring onions, and cheddar cheese.  Enjoy!
